My WisCajun ™ Tasso is a true ham cut dry rubbed with a proprietary nine seasoning blend. Traditional Tasso in Louisiana is usually pork shoulder. My Tasso, being lean muscle meat, has uses beyond traditional Gumbo and Jambalaya. Thin sliced it compliments charcuterie plates, and is wonderful on a muffaletta or other sandwiches. The product comes in random weight (half pound to one pound typical) vacuum sealed packs, nominally 5-6 pounds per case.
